SOURCING
Anybody can buy a bag of coffee beans, but all beans are not equal.
It takes time, skill and persistence to hunt down the best. It’s a quest.
CUPPING
Each roast of coffee has its own character. It doesn’t give up its secrets easily.
It takes time to get to know it – roasting, cupping, tasting, comparing, correcting, thinking things over and roasting again.
RELATIONSHIPS
Working with exceptional growers side by side, day in and day out.
Listening more than talking. Taking the time to be not just a buyer, but also a friend.
GETTING OUT OF THE OFFICE
Getting out of the truck. Being in the weather and on the land till they become part of you.
Then — taking all that back to the roastery and pouring every bit of knowledge, every ounce of craft,
and all our heart into each detail. It takes time, but it’s worth every minute.
