Pacamara is traditionally a varietal originating from El Salvador that is a hybrid of two more basic varietals: Pacas and Maragogipe.  This hybrid prefers cooler temperatures and higher elevations.  Naturally, these beans are larger and boast amazing flavor that can be distinctive from season to season.  This coffee is complex and has layers of flavors and sparkling acidity that continues to develop as the coffee cools.  When hot this coffee is apple cider-like and caramel and develops into strawberry with a grapefruit-like acidity.  This full bodied coffee is one to be enjoyed sip to sip, until the last drop.
